How To Cook Sprouts For The Christmas Dinner On The Barbecue


Tasty, flavoursome Brussels sprouts cooked on the BBQ

Christmas dinner isn’t Christmas dinner without the sprouts, love them or hate them we consume more at Christmas than at any other time and there is more to the humble sprout than just being boiled to death. Modern varieties have had that bitterness bred out of them so are much sweeter than they were years ago. If you don’t like the smell of them cooking in the kitchen then the ideal answer is: cook them on the barbecue. Brussels sprouts are incredible good for you as they have very few calories and are packed with protein and vitamins C and K. They could also contribute to lowering the risk of heart disease, obesity and diabetes; so try these simple recipes and hopefully you will start loving these much maligned vegetables.

Grilled sprouts

  • Brussels sprouts; whole if small, otherwise halved or quartered if large
  • glug of olive oil
  • 2 crushed cloves of garlic
  • 1 dessertspoon smoked paprika
  • sea salt
  • ground black pepper
  1. Place all ingredients into a plastic bag and thoroughly coat the sprouts with the mixture.
  2. Heat the BBQ to a medium to medium high direct heat.
  3. Pour out the sprouts into a Weber Grilling Pan, cook for 15 – 20 minutes, turning every 5 minutes to get an even browning.

Sprouts with bacon and onion

  • Brussels sprouts; sliced into fine threads
  • 4 rashers streaky bacon; thinly sliced
  • ½ white onion; finely diced
  • knob of butter
  • sea salt
  • ground black pepper
  1. Heat a Weber Griddle on the BBQ over a medium direct heat.
  2. Melt a good knob of butter, add the bacon and onion and cook until the bacon is cooked and the onion soft.
  3. Add the sprouts, salt and pepper and cook for 3 – 5 minutes stirring continually. As you are using butter take care not to let it burn.
