How To Cook Chicken In White Wine And Tarragon In The Weber Gourmet Barbecue System Dutch Oven


Cook delicious stews and casseroles in the Weber Dutch Oven on the BBQ

This video, featuring Richard Holden the Gourmet BBQ chef, shows you how to cook Chicken in White Wine with Tarragon in the Dutch oven which is part of the Weber Gourmet Barbecue System (GBS) range. This system features a grate with a removable circular inner grate into which the Dutch Oven fits. Other accessories include a wok, griddle, waffle/sandwich maker, pizza stone, sear grate and a poultry roaster. The GBS comes as standard on some of the models in the Summit, Spirit and Genesis ranges and you can also buy it separately to fit the larger charcoal models.

 

 You will also need apple wood chips, which need soaking in water for half an hour before use. The wood chips can be put onto the charcoal or into a smoker box if you have a gas BBQ. The chicken portions, which are locally sourced from Higginsons award winning butchers at Grange over Sands, are first smoked using the apple wood chips. The Dutch Oven is pre-heated and the chopped chorizo is rendered down a little in some rapeseed oil before the vegetables are added. These are then sweated down over a medium heat for a few minutes before adding the smoked chicken, tarragon and wine and some seasoning.

This is then left to cook over a medium heat for 20 – 30 minutes until the chicken is cooked through. Once the chicken is cooked lift out and keep somewhere warm while you add some crème fraiche or single cream to the sauce; this helps thicken it a little and adds just another level of richness to the dish. Garnish with a few sprigs of tarragon, serve with some nice crusty bread and there you have an easy chicken casserole. This can easily be cooked before your main event and left somewhere warm while you concentrate on cooking other delicious dishes.   • Chicken portions
  • 200g cooking chorizo
  • 200g chopped celery
  • 200g chopped onion
  • 200g diced carrots
  • 200g chestnut mushrooms, chopped
  • rapeseed oil
  • sea salt and ground black pepper
  • 650mls (bottle) good quality white wine
  • bunch tarragon
  • 4 – 5 tbsp crème fraiche or small tub single cream
