Toffee apple cake baked on the Traeger Timberline 850 wood pellet grill

Delicious, moist cake loaded with caramel and crunchy pecan nuts

Moist and delicious, this apple cake is loaded with caramel and crunchy pecan nuts. Although it’s cooked on a Traeger wood pellet grill there is no trace of a smokey taste. It can be cooked on any BBQ which has a lid, just use good quality lumpwood charcoal or briquettes as cheap ones may not give you the clean burn you need to bake cakes.

Ingredients:

  • 3 eggs
  • 200g (7oz) golden caster sugar
  • 280ml (10fl oz) vegetable oil
  • 2 teasp vanilla extract
  • 375g (13oz) plain flour
  • 1 teasp salt
  • 1 teasp bicarb of soda
  • 500g (1.1lb) apples; peeled and diced into small pieces
  • 120g (4oz) pecan nuts; chopped
  • jar toffee sauce

Equipment:

  • 25cm (10”) cake tin; greased and lined

Pre-heat the Traeger to 175C (347F).

Beat the eggs until light and frothy and gradually add the sugar.

Beat in the oil and vanilla.

Combine the dry ingredients and add to the mixture.

Stir in the apples and pecans; if the apple pieces are too big they won’t cook.

Pour into the cake tin and bake in the centre of the grill for about 50 minutes.

Cool slightly and remove from the tin.

Warm the sauce until it is runny then insert skewers into the cake and slowly drizzle over while the cake is still warm.
