Daughter of a farmer and market gardener so have always had a connection with the outdoors, whether it was keeping animals or producing fruit, vegetables and cut flowers. Along with my work at Hayes Garden World I also have a smallholding, mainly breeding rare breed pigs. How do I cook roast Christmas parsnips on the Traeger Timberline 850 Wood pellet grill?

Cook delicious, sweet, aromatic parsnips outdoors on the BBQ at Christmas

  • parsnips
  • honey
  • fresh thyme; finely chopped

  • roasting tray

Peel and cut the parsnips into quarters.

Coat the parsnips with the honey and sprinkle on the thyme.

Cook for about 20 minutes on the centre shelf at 200C (392F); don’t place them too near the bottom otherwise the honey will burn.

Take them off when the tip of a sharp knife penetrates them easily.
