How to bake chocolate brownie cookies on the Traeger Timberline 850 wood pellet grill
BBQs are not just for meat; why not try these simple chocolate cookies
While you have the grill fired up why not do a bit of baking, and these chocolate brownie cookies are sure to go down a storm. We made the video on one of the hottest days of the year so melting the chocolate was no problem, but stopping the chocolate chips from melting and the butter from turning to oil was a bit tricky, however the result was delicious. You can use the Weber Deluxe Stainless Steel Grilling Pan instead of a baking sheet.
- 450g (1lb) dark chocolate; finely chopped
- 120g (4oz) unsalted butter; room temperature
- 4 eggs
- 265g (9oz) caster sugar
- 1 teasp vanilla extract
- 180g (6oz) plain flour
- ½ teasp baking powder
- 8 oz milk chocolate chips
- 2 baking sheets
- parchment paper
Pre-heat the Traeger to 175C (347F); these can just as easily be cooked over gas or charcoal.
Melt the dark chocolate and butter over a bowl of boiling water then cool to room temperature.
Whisk together the eggs, sugar and vanilla extract and set aside.
Sift together the flour & baking powder.
Combine the melted chocolate mixture with the egg mixture then gently fold in the flour and baking powder then add the chocolate chips.
Place serving spoonfuls of mixture onto parchment lined baking sheets.
Bake for 10 – 12 minutes until firm on the outside but they still give a little when you press the top. They still want to retain some of the brownie gooeyiness inside. You can give them a little longer and they will be biscuits not cookies.
